Black Sesame Crumble Hojicha Banana Bread

Serves: 8–10 slices
Time: 75 minutes

Ingredients

  • Hojicha Banana Bread
    • 3 ripe bananas (approximately 300g peeled)
    • ½ cup melted butter (113g)
    • ¾ cup sugar (150g)
    • ½ cup Greek yogurt (120g)
    • 2 eggs (approximately 100g without shells)
    • 1 tsp vanilla extract (5ml)
    • 1½ cups all-purpose flour (180g)
    • 1 tsp baking soda (5g)
    • 3 tbsp hojicha amber powder (15g)
  • Black Sesame Crumble Topping
    • ¼ cup melted butter (57g)
    • ¼ cup sugar (50g)
    • ½ cup all-purpose flour (60g)
    • 2 tbsp black sesame powder (12g)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Mash 3 ripe bananas in a large bowl until smooth. Add the melted butter, sugar, Greek yogurt, eggs, and vanilla extract, then mix until well combined.
  3. Sift in the all-purpose flour, baking soda, and hojicha powder. Gently fold until just combined, being careful not to overmix the batter.
  4. In a separate bowl, combine the melted butter, sugar, flour, and black sesame powder for the crumble topping. Mix until the texture resembles coarse crumbs.
  5. Pour the banana bread batter into the prepared loaf pan and evenly scatter the black sesame crumble over the top.
  6. Bake at 350°F (175°C) for approximately 60 minutes, or until a toothpick inserted into the centre comes out clean.
  7. Allow the banana bread to cool in the pan before transferring to a wire rack. Slice and enjoy!

Notes

Use very ripe bananas with plenty of brown spots for the best natural sweetness and flavour.

Avoid over mixing the batter to keep the banana bread soft and tender.

Check for doneness around the 50-minute mark, as baking times may vary depending on your oven and loaf pan.
