Honey Matcha Gin & Tonic



We've partnered up with @bcliqourstores to concoct a savoury and sweet cocktail. Infused with our ceremonial grade matcha and a dose of dry, floral gin, this festive drink is a must-try!



  • Shallow Plate
  • Shallow Bowls
  • Bamboo whisk
  • Small sifter
  • Jigger or measuring spoons
  • Cocktail shaker with lid
  • Tall serving glass


Salted Matcha Rim Mix

Simple Honey Syrup (for the rim & the drink)

  • 1.5 oz Liquid Honey
  • 1.5 oz Hot water

The Drink

  • 1 tsp Ceremonial matcha powder (2g to be exact)
  • 1 oz Hot water
  • 1 oz Freshly squeezed lime juice (from 1-2 limes) (2 oz if using store bought)
  • 2 oz Gin (Empress Gin or Tanqueray London Dry Gin)
  • 1/2 cup Ice cubes (+ 6-8 ice cubes for serving)
  • 160 ml Tonic water


Simple Honey Syrup

  1. Melt 1.5oz of honey in 1.5oz of hot water in a shallow bowl.

  2. Stir the mixture thoroughly. You should get a total of 3oz of Honey Syrup.

  3. Put aside 2oz of Honey Syrup for later use, leaving 1oz in the bowl for rimming the cup

Salted Matcha Rim

  1. Grab your shallow plate and combine 1 tsp matcha powder and 1 TBSP fine sea salt. Mix until it is well incorporated.

  2. Using the serving glass, rim the the glass with the honey syrup and immediately coat the rim with the matcha salt mix. Make sure to coat all the sides. Set aside.

Assembling the Drink

  1. In another shallow bowl, prepare the matcha shot by sifting in 1tsp (2g) of matcha powder and adding in the 1 oz of hot water. Using the bamboo whisk, whisk until it is well combined.

  2. In the cocktail shaker, add in the matcha shot, 2oz of honey syrup, 2oz of gin, 1oz of freshly squeezed lime juice.

  3. Add 1/2 cup of ice cubes into the shaker cup. Cover with the lid and shake for about 5 seconds then pour the mixture into the serving cup with the salted matcha rim.

  4. Add in the remaining ice cubes, followed by tonic water. Enjoy!
