No-Cook Strawberry Purée (2-Drink Portion)

Time: 10 minutes active, 3-4 hours resting
Ingredients
- 150g fresh strawberries
- 45-60g white sugar (30–40% of strawberry weight)
- 45g = less sweet, more fruity
- 60g = sweeter, more syrupy
- 1-2 tsp lemon juice, to taste
Feel free to scale up or down depending on how many drinks you’re making!
Instructions
- Finely chop the strawberries into pieces small enough to fit through your straw
- Mash or blend until about ⅔ of the mixture is pureed
- Mix strawberries with sugar and lemon juice in a small bowl.
- Macerate: Cover and refrigerate at least 3-4 hours, ideally overnight.
- Drain a little liquid: Remove about 2 tbsp of the juice that collects, this keeps the mix concentrated and prevents watery lattes!
Use
- Add about 55-60g per drink to the bottom of your glass (for the best layering)
- Stir to mix with your latte and enjoy!
