No-Cook Strawberry Purée (2-Drink Portion)

Serves: 2
Time: 10 minutes active, 3-4 hours resting

Ingredients

  • 150g fresh strawberries
  • 45-60g white sugar (30–40% of strawberry weight) 
  • 45g = less sweet, more fruity 
  • 60g = sweeter, more syrupy
  • 1-2 tsp lemon juice, to taste

Feel free to scale up or down depending on how many drinks you’re making!


Instructions

  1. Finely chop the strawberries into pieces small enough to fit through your straw
  2. Mash or blend until about ⅔ of the mixture is pureed 
  3. Mix strawberries with sugar and lemon juice in a small bowl.
  4. Macerate: Cover and refrigerate at least 3-4 hours, ideally overnight.
  5. Drain a little liquid: Remove about 2 tbsp of the juice that collects, this keeps the mix concentrated and prevents watery lattes!

Use

  1. Add about 55-60g per drink to the bottom of your glass (for the best layering)
  2. Stir to mix with your latte and enjoy!
