Mochi Genmaicha S’more

Serves: 1–2
Time: 15 minutes active, plus 2 hours chilling

Ingredients

• 2 pieces Japanese mochi
• 2–4 graham crackers
• 100g white chocolate chips
• 4g Genmaicha tea powder
• 1 tsp coconut oil
• Black soybean kinako powder, for sprinkling or mixing into the chocolate

Instructions

1. Add the white chocolate chip and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring well between each interval, until smooth and fully melted.

2. Sift in 4g Genmaicha tea powder and stir until evenly combined and glossy. Pour the Genmaicha chocolate onto a parchment-lined tray or silicon mould and spread into a thin layer. Freeze for at least 2 hours, or until firm.

3. Preheat the oven to 345°F. Place the mochi pieces on a baking tray and bake for 10–12 minutes, or until puffed and lightly golden on top.

4. Warm the graham crackers in the oven for a minute or two, if desired.

5. Assemble your s’mores with a graham cracker, a piece of Genmaicha chocolate, and the warm mochi. Top with a sprinkle of black soybean kinako powder.

6. Give it a little squish, take a bite, and enjoy!
