Matcha Lava Cake

Ingredients
- 35g sugar
- 1 whole egg
- 50g white chocolate
- 55g unsalted butter
- 7-10g matcha powder (depending how strong you like it!)

28g all-purpose flour, sifted
Instructions
- In a bowl, whisk together the egg and sugar until slightly pale.
- In a separate heatproof bowl, melt the white chocolate and butter until smooth.
- Sift the matcha powder into the melted mixture and whisk until fully combined.
- Pour in the egg mixture and whisk until smooth.
- Gently fold in the flour until just incorporated, but do not overmix.
- Generously butter and flour your ramekins, tapping out the excess.

Fill the ramekins about ¾ full, they won't rise much at all!
To Cook (Air Fryer)
- Air fry at 200°C (390°F) for 8 minutes for small ramekins or 10 minutes for a larger one.
- Let cool for 1 minute, then loosen the edges and unmold while still warm for the lava effect.
