Matcha Lava Cake

Matcha Lava Cake 

Serves: 1
Time: 15 minutes

Ingredients

  • 35g sugar
  • 1 whole egg
  • 50g white chocolate
  • 55g unsalted butter
  • 7-10g matcha powder (depending how strong you like it!)
  • 28g all-purpose flour, sifted

Instructions

  1. In a bowl, whisk together the egg and sugar until slightly pale.
  2. In a separate heatproof bowl, melt the white chocolate and butter until smooth.
  3. Sift the matcha powder into the melted mixture and whisk until fully combined.
  4. Pour in the egg mixture and whisk until smooth.
  5. Gently fold in the flour until just incorporated, but do not overmix.
  6. Generously butter and flour your ramekins, tapping out the excess.
  7. Fill the ramekins about ¾ full, they won't rise much at all!

To Cook (Air Fryer)

  1. Air fry at 200°C (390°F) for 8 minutes for small ramekins or 10 minutes for a larger one.
  2. Let cool for 1 minute, then loosen the edges and unmold while still warm for the lava effect.
