  3. After the 30 minutes, reduce the heat and simmer for 15 minutes.

  4. Then, turn off the heat and rest the pearls for 35 minutes (lid on).

  5. Set your strainer over the sink, and gently pour the pearls in. Using lukewarm water, rinse the pearls thoroughly until the tacky layer is minimal.

  6. In a large bowl, pour in the cooked pearls. Then, pour your brown sugar syrup(recipe located at the end) over the pearls. Allow if to soak for 10 minutes before serving.

Although your patients is involved, our chewy and sweet tapioca pearls are well worth the wait. It is best to consume them immediately as the pearls are fresh!

Useful tips:

  • Brown sugar syrup: On medium-high heat, combine equal amounts of water and brown sugar in a small stove-top pot. Using a whisk, stir and dissolve the sugar and water. Allow the syrup to come to a boil, then take it off the heat. Once the mixture has cooled completely, simply pour it over your pearls.

  • Rinsing your pearls well will reduce the sticky texture(from the cooking process).
